Food is a universal language, and there’s no better way to get to know a new friend, or a new community, than by breaking bread together and digging in to a delicious meal. Legend has it, King Alfonso X determined that the best way to drink wine without falling ill was to accompany it with a small snack. Others claim that tapas were the result of bartenders covering patron’s drinks with bread, meats, and cheeses in order to avoid anything from falling in. Regardless of the origin, the trend caught on and tapas became one of the most popular styles of cuisine in Spain. Head out and explore the city’s oldest and most atmospheric neighbourhood before a light lunch with a vermouth tasting. In the afternoon, take part in a cooking class at a G Adventures-supported migrant training kitchen. Meet some of the students and learn from the resident chef how to make paella, one of Spain’s most iconic dishes, before devouring your delicious creation for dinner. Vermouth is a fortified wine, historically made to be either sweet or dry, and is flavoured with herbs, spices, citrus, and sugar. Spanish Vermouth is typically sweet and red but dry white vermouth can be found there as well.

With the help of migrant students, learn how to make paella with the resident chef, accompanied by a discussion that promotes social reflection - with the kitchen and food at the centre of it all. Your Foodie Moment: Light Walking Lunch in Madrid
Dive head-first into Madrid on arrival and set off on foot to taste some of the city's most iconic and delicious mouthfuls. Try things like empanadas, thinly-sliced Jamon Ibérico, croquettes and churros as you eat your way through the city.

Córdoba Guided Walking tour with the Mezquita
Be amazed by the diverse and stunning architecture of Córdoba's most famous monument, the extraordinary Mezquita. Built as a mosque in 785 by the Moors, the Mezquita was converted in the 16th century by the remarkable addition of a Christian cathedral inserted into the centre of the building. Afterwards, continue the walk through the Jewish quarter, visiting the Calleja de las Flores and the Souk.

Today is a big day, - one for the books - with a guided visit of the Alhambra, an architectural masterpiece and a UNESCO World Heritage Site. Take advantage of the time to wander the whitewashed historic quarter of the Albaicín Neighbourhood, visit the Sacromonte caves in the gypsy quarter, or stay in the city centre to enjoy the trendy tapas bars and lively music scene.

Enjoy a free day to get the most out of everything that Seville has to offer. Take the opportunity to explore the interiors and gardens of the Alcázar, a magnificent palace dating from Moorish times, or visit the true heart of Seville, the Santa Cruz quarter— a charming area with winding alleys, picturesque lime-washed houses, flowery patios, and small squares. Regroup in the evening for an optional dinner and final night out on the town with your travel mates.
